Tuber Aestivum/Uncinatum
Summer Truffle (Tuber Aestivum).
The fruiting body has tuberous or rounded form in 2,5 – 10 cm in diameter. Fruit surface is from brown-black to bluish-black shade, covered with black pyramid-shaped warts. At the beginning the pulp is very thick, for older mushrooms – more free, by the time colour changes from white to brown-yellow and gray-brown with light stripes, which make marble pattern. Mushroom has a nut flavor - sweet, smell - nice, strong.
Burgundy truffle (Tuber Uncinatum)
These are kind of Tuber Aestivum, but with more expressive taste and a stronger flavor than black summer truffles. Ripens from early June until the end of October. Considering that this beautiful sort is used mostly in Europe - the price is a little lower than other truffles, it varies depending on the season - about 600 euros per kilogram.
